Roman Foltán takes over the Long Bar. Jeeves De Veyra

World-renowned mixologist Roman Foltán showed off his skills in a one-night-only bar takeover of the Long Bar at the Raffles Makati.

Czechoslovakia native Foltán is part of the Compound Collective. This internationally acclaimed beverage consultancy group works with five-star hotels to share expertise regarding the bar and alcohol portion of their F&B business including station design, tools, equipment, and drink recipes based on the specifications of their clients. 

Foltán himself was on the team behind the Artesian at Langham Hotel in London when it took the top spot on the 2017 World’s 50 Best Bar List.

Compound Collective has been working with the Raffles Group in Asia, helping different properties enhance their respective bars. 

At the Long Bar takeover, Foltán gave a taste of different drinks made with Filipino ingredients and flavors.

1. The Classic Singapore Sling

This drink is an iconic part of Raffles Singapore’s mystique. This refreshing beverage was updated with a gin by Sipsmith custom-distilled for the Raffles group. 

Compound Collective tweaked the proportions of the ingredients -- the result is not as sweet as the original, more balanced, but still as refreshing to drink on a hot, humid, and barmy Singapore afternoon.

2. Sophia

This is a drink pairing in itself. Munch the included camote chip while drinking this potion of extracted camote syrup mixed with white rum and sparkling white wine to start the night.

3. Cassava Nova

This frothy version of the Whiskey Sour is guaranteed to bring out the Cassanova (wink, wink) in anyone, with the added touch of cassava sweet vermouth.

4. Tamarind Man

Cool, sour and sweet, this drink has ice, tamarind syrup, and the freshness of mint leaves to take the sting out of its vodka base.

5. Or Highwater

Perhaps the most potent of Foltan’s concoctions, this sweet and spicy tequila-based sipping cocktail is served with a bite of the Long Bar’s spiced chicharron. 

Or Highwater nicely cuts through the rich spice and fat of the pork crackling.

Foltán hinted that this was just a preview of what the Compound Collective had in store for the Long Bar in 2020. 

Whatever they’re shaking up, it’s sure to contribute to Manila’s vibrant bar scene.

The Long Bar can be found at the ground floor of the Raffles Makati. Bar hours are 3 p.m. to 12 a.m. from Sunday to Wednesday; and 3 p.m. to 1 a.m. from Thursday to Saturday.
