5 rainy day recipes that are perfect with cheese

MANILA -- A comfy blanket and a cup of brewed coffee are undoubtedly the best things to have during the rainy days. And these are best paired with a good book or a classic movie for the whole family to enjoy during your weekend "staycation."

But, for sure, you'd also want to have something to eat and warm your body with. There are, in fact, countless recipes you can try, but if you're looking for something creamier and cheesier, here are some of the dishes that will surely delight the whole family: 

1. Cheesy Lugaw

If the storm is too strong, don't take the risk of going outdoor to buy lugaw from your favorite soup kitchen. Instead, make your own lugaw with this basic but extra creamy recipe: 


2 tbsp, canola oil
2 tbsp, onion, chopped
2 tbsp, garlic, chopped
2 tbsp, ginger, julienned
1 1/2 tbsp, fish sauce
1/2 cup, long-grain rice
4 cups, chicken stock
1/2 piece, chicken bouillon cube
to taste, salt
1, egg, hardboiled
for garnish, spring onions
for garnish, garlic, toasted
1/4 cup, Eden Original, shredded

  • In a pot, heat oil and saute garlic, onions and ginger. Add patis and bring to a boil.
  • Add rice grains and stir. Add the stock, mix then bring to a boil then reduce to a simmer. Simmer for 30-40 minutes while stirring constantly or cook until mixture thickens to your desired consistency.
  • Add chicken bouillon cube, mix well and adjust seasoning as necessary. Top with shredded Eden cheese, sliced hard boiled eggs, fried garlic, and spring onions. Serve hot. 

2. Savory Meatball and Cheese Soup

Amid the heavy rains and howling winds, keep yourself warm and stuffed with a bowl of Savory Meatball. But while it already sounds delicious enough, you can make this bowl of goodness extra creamy by adding cheese: 


1 lb, ground pork
4 cloves, garlic, minced
1/2 cup, onion, chopped
1, egg
1 1/4 tsp, salt
1/2 tsp, pepper
1/2 cup, flour
3 tbsp, butter
1/8 tsp, garlic powder
2 cups, milk
14 oz, vegetable broth
1/2 cup, carrots, shredded
1/2 cup, celery, finely chopped
1 1/2 cup, kraft cheddar, shredded
3/4 cup, Eden Melt Sarap, shredded


  • To form meatballs, mix pork, 1/2 cup onion, 1 tsp salt, pepper and egg in a bowl. Form into 2-inch balls and coat with flour.
  • In a pan, fry meatballs until golden brown. Set aside.
  • In a saucepan, saute onion in butter until translucent. Add the flour, 1/4 tsp salt, garlic powder and pepper. Cook over medium heat and stir until smooth. Gradually add milk while stirring, until milk mixture thickens.
  • In a separate saucepan, bring broth to a boil. Add carrot and celery and simmer for 5 minutes or until vegetables are tender.
  • Add to milk mixture and stir until well blended. Add cheeses and stir until melted. Mix in meatballs and stir, but avoid boiling. 
  • Serve in soup bowls and enjoy!

3. Cheesy Chicken Sopas

A good alternative to lugaw, chicken sopas is one of the easiest rainy day recipe that you can try. With macaroni, chicken, and some Baguio veggies, you can make a sopas that you can serve on breakfast, lunch, or dinner. 


30 grams, Eden Meltsarap diced
0.25 kilo, chicken breast shredded/ boiled
150 grams, carrots diced
150 grams, potato diced
50 grams, cabbage shredded
20 grams, onion chopped
10 grams, garlic chopped
250 grams, macaroni pasta cooked/ al dente
3 tbsp, butter
1.5 cups, evaporated milk
1 tbsp, salt
1 tsp, pepper


  • Boil the chicken breast and set aside the stock.
  • In a pot, sauté garlic and onions and pour in the chicken stock.
  • Add carrots, potato, shredded chicken in the chicken stock then boil.
  • Add the macaroni pasta, butter, cabbage, and Eden Meltsarap. * Season with salt & pepper.
  • Sopas is ready, add evaporated milk until the desired taste.

4. Cheesy Chicken Misua Soup

Another rainy day recipe that you can easily prepare is misua soup, which goes perfect with chicken, pork, or beef. But did you know that it also goes magically well with cheese? Check this recipe: 


1 small bundle, misua, cut in half
1 cup, chicken meat, cubed
3 pieces, eggs, beaten
1 piece, onion, minced
3 cloves, garlic, minced
4 cups, water
2 tablespoons, vegetable oil
pinch of, salt and pepper to taste
1/2 cup, grated eden cheese
1 medium-sized, patola, sliced thinly
For garnishing, spring onion and grated Eden Cheese


  • In a pan, heat oil and sautegarlic and onion. Add chicken and stir-fry until it changes color. Add water, season with salt and pepper. Bring to boil.
  • Add misua and patola and simmer for 5 minutes.
  • Pour beaten eggs and stir well. Transfer to serving bowl, garnish with more Eden cheese and spring onions. Serve hot.

5. Cheesy Champorado

If you're looking for something sweet to prepare as breakfast or dessert, you can never go wrong with a bowl of champorado. You can serve it hot or cold, whichever you want. 


8 tbsp, cocoa powder (or about 4 pieces tableya)
1 cup, glutinous rice (malagkit)
1⁄2 cup, sugar
3 1⁄2 cups, water
1 cup, grated Eden Cheese
To taste, condensed milk (optional)


  • Boil 21⁄2 cups of water in a pot. Put in the glutinous rice and allow water to re-boil for a few minutes.
  • Dilute the cocoa powder in 1 cup warm water then pour in the pot. Stir continuously.
  • Once the glutinous rice is cooked (about 12 to 18 minutes of cooking with constant stirring), add the sugar and cook for another 5 minutes or until the texture becomes thick.
  • Stir in 3⁄4 cup grated Eden cheese. Remove from the pot and place in a serving bowl. Serve hot topped with the remaining grated Eden cheese and a swirl of condensed milk.
